Peanut Butter Coconut Cookies

Who doesn’t love healthy cookies that taste like the “real thing”?  Not to mention they are Gluten Free!  The combo of peanut butter and coconut is de-lish!

 

 

Makes 3 dozen

  • 1 cup creamy peanut butter
  • 1 cup coconut sugar
  • 1 cup butter, softened
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 cup brown rice flour
  • 1 cup white rice flour
  • 1 cup shredded coconut

 

  1. Pre heat oven to 350 degrees.
  2. Cream together butter, peanut butter, and sugar.
  3. Add eggs one at a time mixing thoroughly.
  4. Add baking soda, baking powder, and vanilla.
  5. Stir in flours and then coconut.
  6. Roll dough into balls and then flatten “criss-cross” with a fork on a slightly greased baking sheet.
  7. Bake for 7-8 minutes.
