Who doesn’t love healthy cookies that taste like the “real thing”? Not to mention they are Gluten Free! The combo of peanut butter and coconut is de-lish!
Makes 3 dozen
- 1 cup creamy peanut butter
- 1 cup coconut sugar
- 1 cup butter, softened
- 2 eggs
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 cup brown rice flour
- 1 cup white rice flour
- 1 cup shredded coconut
- Pre heat oven to 350 degrees.
- Cream together butter, peanut butter, and sugar.
- Add eggs one at a time mixing thoroughly.
- Add baking soda, baking powder, and vanilla.
- Stir in flours and then coconut.
- Roll dough into balls and then flatten “criss-cross” with a fork on a slightly greased baking sheet.
- Bake for 7-8 minutes.
